1.5 pounds of fingerling potatoes (use a blend of white, purple, and red)
3 tablespoons olive oil
2 tablespoons of The Fresh Market signature rub or another favorite spice rub

Directions:
Directions:
Preheat oven to 425F. Wash and pat dry potatoes. Cut into 1-2 inch pieces. Place potatoes, oil, and rub into a large bowl and toss to coat. Single layer the potatoes on a baking sheet. Bake for 45 minutes to 1 hour or until fork tender.
