1 14 oz tin diced tomatoes
1 medium onion, chopped
1 Pkg Taco Sauce
2 cups long grain white rice
4 T butter
2 tins chicken broth
1 tablespoon tomato paste
1 ½ teaspoons table salt
½ cup minced fresh cilantro leaves
1 lime, cut into wedges for serving

Directions:

1. Heat butter in medium sized pot - on medium high heat. Add onions and rice stir to mix the butter on to all of the rice.
2. Add the tomatoes, taco sauce and tomato paste. Stir until liquid at the bottom is reduced.
3. Add the chicken broth, mix all ingredients well and heat until mixture just begins to boil.
4. Turn off heat, but leave the pot on the element. Bake on the stove top until liquid is absorbed and rice is tender, 30 to 35 minutes.
5. Stir in cilantro .
6. Serve immediately, passing lime wedges separately
