1 large leek, thinly sliced
2 T olive oil
2 lb mussels, scrubbed and debearded
1 C water
2-3 thyme sprigs
1 bay leaf
2 Tbsp fresh tarragon

May substitute 1 C red wine, dark beer, or white wine for water
May substitute 1 large diced yellow onion; 1/3 C diced celery, 1/3 C diced bell pepper 1/3 C diced onion; or 1 thinly sliced shallot and 3 thinly sliced garlic cloves for leek
May substitute 2 thyme sprigs; 2 rosemary sprigs and 2 peel strips from an orange; or 1 dried chipotle chili for bay leaf
May substitute 2 Tbsp fresh basil and/or cilantro with juice of one lime; 1 bunch of thinly sliced scallions; or 2 Tbsp fresh parsley and 2 Tbsp capers for tarragon

Heat a heavy pot over medium-high heat. Add 1 Tbsp oil and leek. Cook, stirring often, for 3 minutes.
Add mussels, water (or substitute), thyme, and bay leaf (or substitute). Cover and cook 3-5 minutes (until mussels fully open).
Toss with tarragon (or substitute) and 1 Tbsp oil.
Serve with crusty bread.
