1 - 18 ½ oz pkg yellow cake mix
3½ oz package of instant lemon pudding mix
4 large eggs
¾ cup vegetable oil

Glaze:
4 cup confectioners sugar
⅓ cup fresh lemon juice
1 lemon zested
3 tbsp vegetable oil
3 tbsp water

Directions:
Make glaze first: Sift the sugar into a mixing bowl. Add lemon juice, zest, oil, and water. Mix with a spoon.

Combine cake mix, pudding mix, eggs, and oil. Blend for 2 minutes. Fill each cupcake tin half way. Bake at 350 degrees for 10 to 12 minutes or until done.

Dip cupcake into the glaze while warm.
