2 pkgs. unflavored gelatin
1 c. cold water
1 1/2 c. boiling water
1/2 c. sugar
1/4 c. lemon juice
1/4 c. vinegar
1 tsp. salt
1 1/2 c. finely shredded cabbage
1 1/2 c. chopped celery
1/2 c. chopped red or green peppers
1/2 c. chopped pimento-stuffed olives
2 -3 T. shredded carrots

Sprinkle the gelatin over the cold water and allow to dissolve, then add boiling water. Stir in sugar, lemon juice and salt. Chill until the mixture is syrupy about an hour. Then fold in cabbage, celery, peppers, olives and carrots. Pour in molds or into square dish to set. Chill until firm and serve on lettuce leaves. Optional-add a little mayonnaise to decorate the top.

Through the years I have changed the recipe to make it much simpler by just using either lemon or lime jello and leaving out the lemon juice, vinegar and salt. Makes a colorful salad!!!

The origin of this gelatin salad won third prize in a 1905 recipe contest sponsored by Knox, then and now the makers of unflavored gelatin. My mother, Macy Moore Cunningham, made this when I was a child growing up and I made it for my children when they were young. I'm not sure they would remember this as it wasn't one of their favorites! I thought it was very good1
