3 - 4 medium size zucchini washed and grated
½ tsp salt
3 eggs
4 oz flour
1 tsp baking powder
½ lb grated gruyere (or any other melting cheese)
4 T chopped parsley
1 handful grated parmesan cheese

Directions:
Directions:
Preheat oven to 350F (180). Line a baking dish with parchement paper.

Place the zucchini in a strainer over a bowl and add the salt. Using the back of a spoon, press firmly against the sides of the strainer to extract as much liquid as possible. Let it sit on the counter until you are getting the rest of the ingredients ready.

Mix together the grated zucchini, eggs, flour, baking powder cheese, parsley, salt and pepper. Using a spoon, scoop out about 2 tablespoons of the batter and drop onto the baking sheet. Continue until you run out of batter.

Bake for 25 minutes or until golden brown. Take it out of the oven and let it cool for about 5 minutes before serving.

If you like you can serve this with a yoghurt sauce. Mix togehter
1 cup greek yoghurt, 2 cloves minced garlic, 1 T lemon juice and 1/2 tsp salt
