Grilled Romaine Salad with Crab Recipe

2 ears corn, shucked
Cooking spray
12 oz crab meat (may use shrimp)
1/4 tsp pepper
6 Tbsp fresh lemon juice (3 lemons)
1/2 tsp salt
1/4 C canola oil
6 large romaine lettuce hearts
3/4 C guacamole
2 C halved cherry tomatoes

Coat corn with cooking spray and grill 12-14 minutes.
Let cool, remove corn from cob, and place in bowl.
Place crab meat, pepper, 2 Tbsp lemon juice, and 1/4 tsp salt in large bowl. Toss to combine.
Cut romaine hearts in half. Brush cut side with oil and grill until charred (about 1 minute).
Stir together guacamole, remaining lemon juice (1/4 C), and 1/4 tsp salt.
Spoon crab mixture evenly into romaine hearts. Top with corn and tomatoes. Spoon dressing over top and serve.
