2 lb pork shoulder minced
1 lb fresh pork belly minced
1 tsp salt
oz black pepper
3 peperoncini (optional)
2 cloves of finely minced garlic
3 pinches of sage powder
3 pinches of rosemary powder
2 pinches of cinnamon
2 pinches of paprika
1 pinch of clove powder
1 cup of white wine

Directions:

Mix all the ingredients very well. Cover and refrigerate over night.

The next day make sausage patties of fill into casings.
