Sausage Stuffed Spaghetti Squash Recipe

1 med. (or 2 small) spaghetti squash
1 lb. ground Italian sausage without casings
c. diced red onion
2 tsp. minced garlic
1 green pepper
1 c. sliced mushrooms
1 14 oz, can tomato sauce
1 tbsp. Italian seasoning
2 c. grated mozzarella cheese divided

Preheat oven to 350. Carefully cut squash in half and remove seeds. Prick squash several times with a fork and microwave 1-2 minutes to slightly soften. Place sausage, onion and garlic in a skillet and saute over medium heat until sausage is browned and crumbly. Add bell pepper and mushrooms and saute 3 minutes. Drain fat. Stir in tomato sauce and Italian seasoning. Simmer 5 minutes. Sprinkle of the cheese evenly over insides of squash halves. Equally divide the sausage mixture over the cheese . Top stuffed squash with remaining cheese and bake 35-40 minutes. If squash isn't fork tender cook it in the microwave a few minutes at a time until it is. Let stand 5 minutes before serving.
