Pudding Cake Recipe

Nut Mixture:
cup sugar
1 tsp cinnamon
cup ground pecans

1 yellow cake mix
1 pkg vanilla instant pudding
cup corn oil
cup water
4 eggs
1 tsp vanilla

1 cup powdered sugar
3 tsp milk
tsp butter extract
tsp vanilla

Preheat oven to 350. Combine sugar, cinnamon, and ground nuts to make nut mixture. Grease cake pan well and sprinkle some of nut mixture in bottom of pan. Prepare batter by combining cake mix and pudding mix. Add corn oil and water; mix well. Add eggs one at a time; beat for 8 minutes at high speed. Add vanilla and butter extracts near end of beating time.

Layer batter and nut mixture in pan, starting and ending with batter. Bake at 350 for 35-40 minutes or until done. Let stand on racks to cool for 8 minutes.

While cake cools, combine glaze ingredients. Remove cake from pan and apply glaze with a pastry brush.
