1 beaten egg
3 Tbsp milk
½ cup crushed saltine crackers
½ cup grated Parmesan cheese
1 tsp dried oregano
½ tsp paprika
⅛ tsp black pepper
2-3 lbs chicken pieces
2 Tbsp butter or margarine, melted

Directions:
Directions:
In a small bowl combine egg and milk. In a shallow dish combine crushed crackers, Parmesan cheese,
oregano, paprika, and black pepper. Set aside. Skin chicken. Dip chicken pieces, 1 at a time, into egg
mixture; coat with crumb mixture.

In a greased baking pan, arrange chicken, bone side down, so the pieces aren't touching. Drizzle chicken with melted butter. Bake, uncovered, in a 375° oven for 45-55 minutes or until chicken is no longer pink. Do not turn chicken pieces while baking.
