6 medium chicken breast halves
½ cup ricotta cheese
½ cup shredded mozzarella
⅓ cup grated Parmesan cheese
½ tsp dried basil
¼ tsp dried oregano
¼ tsp lemon-pepper seasoning
2 Tbsp butter or margarine, melted
2 cups sliced fresh mushrooms (optional)

Directions:
Using your fingers, gently separate the chicken skin from the meat of the breasts. For stuffing, combine cheeses and seasonings. Divide mixture into 6 even portions, spooning one portion of the stuffing between the skin and meat of each chicken breast.

Place chicken, bone side down, in a 3 quart rectangular baking dish. Brush chicken with butter. Add mushrooms around chicken pieces. Bake in a 375° oven for 45-55 minutes or until no longer pink.
