Catfish:
2 eggs, lightly beaten
¾ cup dry bread crumbs
½ tsp salt
2 lbs catfish fillets (4-6)
vegetable oil

Sauce:
⅔ cup mayonnaise
½ cup sour cream
1 green onion, chopped
1 clove garlic, pressed
1 tsp chili powder
⅛ tsp cayenne pepper

Directions:
Directions:
For Sauce: Combine all ingredients in 1 quart bowl. Mix well, cover and refrigerate and least 1 hour to allow flavors to blend.

For Catfish: Preheat oven to 450°. In shallow dish, combine bread crumbs and salt. Dip fillets into egg, then coat evenly with crumb mixture. Place on baking stone, spray lightly with cooking spray. Bake 10-15 minutes or until fish flakes easily when tested with a fork.
