Oven-Fried Catfish with Cajun Style Sauce Recipe

2 eggs, lightly beaten
cup dry bread crumbs
tsp salt
2 lbs catfish fillets (4-6)
vegetable oil

⅔ cup mayonnaise
cup sour cream
1 green onion, chopped
1 clove garlic, pressed
1 tsp chili powder
⅛ tsp cayenne pepper

For Sauce: Combine all ingredients in 1 quart bowl. Mix well, cover and refrigerate and least 1 hour to allow flavors to blend.

For Catfish: Preheat oven to 450. In shallow dish, combine bread crumbs and salt. Dip fillets into egg, then coat evenly with crumb mixture. Place on baking stone, spray lightly with cooking spray. Bake 10-15 minutes or until fish flakes easily when tested with a fork.
