Planked Wild Turkey Recipe

2 T. Dijon mustard
2 T. Rum
2 T. Honey
1 T. Olive Oil
1 tsp. coriander
1/2 tsp. meat tenderizer (optional)
1 boneless wild turkey breast
8-10 strips of raw bacon
1 prepared plank

Directions:
Directions:
1. In a small bowl, mix all marinade ingredients until thoroughly combined.

2. Place turkey breast in a sealable bag or casserole dish and cover with marinade. Marinate 6-24 hours, refrigerated.

3. Place turkey breast on a prepared plank.

4. Cover with sliced bacon.

5. Grill of bake in a preheated 375º oven 30-45 minutes or until meat thermometer reads 150º-160º. Do not overcook.

Note:
- Never leave planks unattended on the grill or campfire.
- Avoid repeatedly opening the grill cover, as this can cause flare-ups and lost heat.
- Use a large metal spatula to move planks around and off the grill.
- Do not bring a burning or smoldering plank inside the house.
