4 veal shanks
1 cup sliced mushrooms
2 T extra virgin olive oil
1 small onion chopped
2 cloves of garlic minced
1 bunch of parsley chopped
1 cup of red wine
½ cup water
flour for drenching
4 tomatoes
¼ cup cream
salt and pepper

Directions:
Directions:
Season the veal shank with salt and pepper and drench in flour.

Heat the olive oil in a pan and brown the meat all around very well. Add the onion, garlic, mushrooms and parsley. Sauté
and add the red wine and let simmer for a few minutes then add the water and cook covered over medium hat for 30 minutes. Taste for seasoning,add the 4 tomatoes and cook for another 10 minutes. When the veal shanks are tender add ¼ cup of cream. Serve with risotto.
