2 cans white shoepeg corn
1 cup shredded Mozzarella cheese
3 jalapeņo pepper (seeded & diced)
8 oz. mayonnaise
1 cup shredded Colby jack cheese
1 medium size onion (diced)
8 oz. sour cream

Directions:
Directions:
Combine all ingredients in bowl.
Add 1 whole jalapeņo pepper for decoration. Cover and put in fridge till ready to serve.
We like to serve with Frito Scoops but tortilla chips or crackers are good too.
Adjust the amount of peppers based on your taste and tolerance to the heat.

Recipe can be doubled to have more to share.
