3 tsp extra virgin olive oil
4 pieces lamb shoulder
2 cloves chopped garlic
1 32oz can peeled tomatoes
cup white wine
cup water
tsp dried oregano
cup grated pecorino cheese
salt and pepper to taste

Directions:
Directions:
Add all the ingredients except the grated cheese to a casserole pan and simmer slowly until the meat is fork tender about 40 minutes.

After 20 minutes check if it needs more liquid and if so add another to cup of water. Add the grated cheese.

Use the sauce to dress the pasta and serve the meat on the side.
