3 tsp extra virgin olive oil
4 pieces lamb shoulder
2 cloves chopped garlic
1 32oz can peeled tomatoes
½ cup white wine
½ cup water
½ tsp dried oregano
¼ cup grated pecorino cheese
salt and pepper to taste

Directions:
Directions:
Add all the ingredients except the grated cheese to a casserole pan and simmer slowly until the meat is fork tender about 40 minutes.

After 20 minutes check if it needs more liquid and if so add another ¼ to ½ cup of water. Add the grated cheese.

Use the sauce to dress the pasta and serve the meat on the side.
