2 lb salted cod
1 lemon
2 cloves of chopped
1 bunch copped parsley
½ cup extra virgin olive oil
salt and pepperery
2 celery stalks with leaf thinbly sliced
pepperoncini flakes

Directions:
Directions:
Soak dry cod in cold water for 3 to 4 days. Change the water two times a day.

After the 4 days cut the cod into larage chunks. Place into a pot and cover with cold water. Bring to a boil, lower heat and simmer until the cod starts to flake. Do not overcook.

Rinse the cod under cold water and break up into bite size pieces.

Mix the chopped garlic with the celery, parsley, olive oil, freshly squeezed lemon add salt and pepper (pepperflakes). Pour the dressing over the cod and let sit in refrigerator for at least 1 hour before eating
