1 Cup Challenge butter room temp
1 Cup light brown sugar, packed
1 Cup Sugar
1 tsp vanilla
2 eggs
1 tsp baking soda
1 ½ cup flour
¾ cup sweetened flakes coconut
3 cups old fashioned oats

Directions:
Directions:
Preheat oven 350º
Line baking sheet with parchment or silicone mat

Cream Butter and sugar together for 2 minutes until light and fluffy.
Add eggs and vanilla, mix until smooth
Add salt, baking soda, and flour, and mix
Add coconut
Add oats until evenly blended

scoop on to cookie sheet

Bake for 12 - 15 minutes
