Medium pumpkin
1-2 Tbsp oil
Medium onion, chopped
1 cup button mushrooms
1 ½ lb ground beef
2 tsp garlic salt
salt and pepper
4 Tbsp soy sauce
2 Tbsp brown sugar
1 can cream of mushroom soup
8 oz water chestnut slices, drained
1 ½ cup cooked rice

Preheat oven to 350°. Cut top off pumpkin; remove seeds and pulp. Bake 40 minutes and set aside. Heat oil in skillet. Cook onion over medium heat; add mushrooms, meat, garlic salt, salt & pepper. Cook until meat is browned; drain. Add soy sauce, brown sugar, and soup. Cook for 10 minutes. Stir in water chestnuts and cooked rice. Transfer mixture to pumpkin, cover with foil, and bake for 30 minutes or until mixture is heated and pumpkin flesh is tender. Place on a serving platter, add Jack-O-Lantern face, and serve.
