1 package rapid rise yeast (2 ¼ teaspoons)
¼ cup sugar
1 teaspoon salt
3 cups flour
1 tablespoon vegetable oil
1 cup hot water
¼ cup baking soda (for water bath)
4 cups hot water (for water bath)
Kosher salt (for top of pretzel)
½ cup butter (for top of pretzel)

1. Preheat oven to 450
2. Stir together yeast and 1 cup of hot water in mixing bowl. Allow to sit for 2-3 minutes. Add 2 cups flour, 1 tsp salt, ¼ cup sugar and 1 Tbsp oil. Mix well. If dough feels too sticky add the other cup of flour. You want it to feel like play-dough. Turn dough onto floured surface and knead until smooth and elastic. Cover with a clean dish towel and allow to stand for 5 minutes.
3. While your dough rises prepare your dunking bath. Using the baking soda and 4 cups hot water make a water bath. Now grease your cookie sheet.
4. Divide the dough into 8 equal parts. Roll each part into a long snake and form into pretzel.
Carefully dip each pretzel into the bath for 2 seconds. Then place on a greased cookie sheet.
5. Using a pot holder place cookie sheet into oven and bake for 8 minutes. Set your timer. Using a pot holder remove from oven and place on stove top. Carefully brush pretzels with melted butter and sprinkle with kosher salt or sugar and cinnamon.
