2 carrots, sliced OR 12 baby carrots
2 onions, sliced
2 celery stalks with leaves cut into 1-inch pieces
1 3-pound whole chicken or 4-6 chicken breasts
2 tsp. salt
tsp coarse black pepper
cup water, chicken broth or white wine
to 1 tsp. basil

Directions:
Directions:
Put carrots, onions, and celery in bottom of crock pot. Add whole chicken or chicken breasts. Top with salt, pepper, liquid,. Sprinkle basil over top. Cover and cook on Low 8-10 hours (High 3-5 hours, using 1 cup of water). Remove chicken ad vegetables with a spatula.
