1 whole chicken cut into 8 pieces (or chicken breasts)
1/4 cup salt
Ice water, to cover chicken
1/4 cup sugar
1 quart buttermilk
2 T seasoned salt
2 cups flour
3 T bacon drippings
Vegetable shortening for frying

Directions:
Directions:
Place chicken pieces in large bowl; add salt and enough ice water to cover the chicken. Cover with plastic wrap and place in refrigerator for at least 8 hours, or overnight. Drain the chicken and pat dry. Wipe out the bowl, add the sugar, buttermilk, and 1 T seasoned salt and milk well. Add the chicken and place in the refrigerator to soak for 2-4 hours.

Combine the flour and remaining seasoned salt in a brown paper bag. Remove the chicken from the buttermilk. Place the chicken in batches in he paper bag and shake to coat the chicken.

Place the bacon drippings and enough shortening to reach 1" of melted fat in a large black skillet. Heat the fat to 360º over medium-high heat.

Add the chicken pieces to the skillet, a few pieces at a time (do not crowd the skillet), and cook for 15-20 minutes on each side, or until golden brown. Drain the chicken on paper towels before serving
