1 1/2 lbs Flounder Fillets
1 cp Crab Meat flaked
1 tbsp finely chopped Green Bell Pepper
1/4 tsp Ground Dry Mustard
1/4 tsp Worchesire Sauce
1/4 tsp Salt
1/4 tsp Black Pepper
1/4 tsp Old Bay Seasoning
1/4 cp Bread Crumbs
1 Egg White
1 tbsp Mayonnaise
1/4 cp melted Butter
1 Egg Yolk
5 tbsp Mayonnaise
1/2 tsp Paprika
1 tsp Parsley

1. Preheat oven 400
2. Rinse fillets and Pat dry with paper towel
3. Combine Crab meat, green bell pepper, mustard powder Worchesire Sauce, Salt, Black pepper, old Bay and bread crumbs
4. Add egg white and 1 tbsp Mayonnaise
5. Place flounder in shallow baking pan
6. Drizzle melted butter over fillets
7. Spoon Crab meat over fillet then top with another fillet; repeat
8. Bake for 15 minutes
9. Lightly beaten egg yolk in small bowl; stir in 5 tbsp Mayonnaise
10. Remove flounder from oven and spread egg yolk mixature over fillets
11. Sprinkle with paprika & parsley
12. Increase oven to 450; cook about 6 minutes
