5 T butter
1-1/2 cups corn flakes crushed to 3/4 cup
1/3 cup chopped onion
3 T flour
1 tsp. salt
1/4 tsp. pepper
1-1/2 cups skim milk
1 cup (4 oz.) shredded American cheese
4 cups sliced carrots, cooked and drained (about 1-1/2 pounds)
1 T dried parsley flakes
vegetable cooking spray

1. In large saucepan melt butter over low heat. Remove 2 T and mix with crushed corn flakes. Set aside to use as topping.
2. To the remaining butter in saucepan, add onion. Cook, stirring frequently, until onion is cooked but not browned. Stir in flour, salt and pepper. Add milk gradually, stirring until smooth. Increase heat to medium and cook until bubbly and thickened, stirring constantly. Add cheese, stirring until melted. Remove from heat.
3. Stir carrots and parsley flakes into sauce. Spread mixture into a 10x6" glass baking dish coated with cooking spray. Sprinkle cereal mixture evenly over top.
4. Bake at 350º about 20 minutes or until thoroughly heated. Remove from oven. Let stand about 5 minutes before serving.

I found this recipe while searching for something to use up the vegetables, cheese and cereal we received from WIC. I figured if I smothered vegetables with cheese you 3 would eat it. And I was right.
