Ingredients:  
3 large eggs
1 cup sugar
cup fresh lemon juice (about 2 small lemons)
cup butter, cubed

Directions:
Directions:
In a small heavy saucepan over medium heat, whisk eggs, sugar and lemon juice until blended. Add butter. Cook whisking constantly until the mixture thickens and coats the back of a metal spoon. Transfer to a small jar and cool 10 minutes. Refrigerate until ready to use.
