1 cup shortening
1 cup brown sugar
1 cup white sugar
3 eggs well beaten
1 tsp. vanilla
1½ cup flour
1 tsp. salt
1 tsp. baking soda
3 cups quick oatmeal
1 cup nuts (optional)

Directions:
Directions:
Cream together shortening and sugars until smooth. Beat in eggs until the batter is light and fluffy. Add vanilla. Combine flour, salt and baking soda; mix into the batter. Stir in oats and nuts. Drop dough by tablespoonful onto cookie sheet.

Bake at 350º for 10 minutes.
