Carrot Bars Recipe

4 eggs
2 cups sugar
1 cup veg. oil
2 jars Jr. Baby Food Carrots
2 cups flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon

1 (3 oz.) cream cheese softened
4 Tbsp. margarine
1 tsp. vanilla
1 cups sifted powdered sugar

Beat together the eggs and sugar; add in the veg. oil and 2 jars baby carrots. Beat thoroughly. Add in the flour, soda, salt and cinnamon. (May add 1 cup chopped nuts). Pour into a greased and floured sheet cake pan.

Bake at 350 for 30 minutes. Mix frosting ingredients together and spread on cooled cake. Cut into bars.
