2 pounds Red, Russet or Yukon Gold potatoes, peeled
4 Tbsp. butter, melted
to cup cream or half & half, warmed

Directions:
Cut peeled potatoes into 2-inch cubes. In saucepan, add enough salted water to cover the potatoes. Bring to a boil; reduce heat and simmer until potatoes are fork tender, about 15 minutes. Don't overcook as potatoes will be watery. Very important - drain potatoes in a colander. Mash the potatoes until lumps are gone with a potato masher or a potato ricer. Add warmed butter and cream a little at a time, stirring until potatoes are creamy. Do not over stir as potatoes will become gluey.

I don't make mashed potatoes very often, so I use this recipe to help me remember how much butter and cream to use.
