1 can black eyed peas
1 can pinto beans
2 small cans Shoepeg corn
1 cup chopped green pepper
1 cup chopped celery
1 small Vidalia onion, chopped
1 cup diced pimentos

Dressing:
¾ cup sugar
¾ cup white vinegar
½ cup veg. oil

Directions:
Directions:
Mix together the peas, beans and corn after they have been drained and rinsed. Mix in the green pepper, celery, onion and pimento. Set aside. Heat the sugar, vinegar and oil until it starts to boil. Let the dressing cool before pouring over the vegetable mix. Refrigerate overnight.
