Spinach Strawberry Salad Recipe

From Linda's recipe box


Fresh strawberries, cut in half
cup sliced almonds
1 Tbsp. olive oil
2 Tbsp. sugar

⅓ cup red wine vinegar
cup veg. oil
cup sugar
1 tsp. dry mustard
1 Tbsp. poppy seeds

Cook almonds, olive oil and sugar in a skillet on medium heat stirring constantly until caramelized. Be careful to not over brown as it will taste burnt. Remove from heat; cool. Break into small pieces.

Combine dressing ingredients in a shaker and mix well. Just before serving toss the strawberries, spinach, almonds and dressing together. This salad does not keep well once the dressing has been added.
