5 cups water
2 cups pearl barley
½ tsp. salt
2 fresh bay leaves
2 tbsp. fresh oregano chopped or 2 tsp. dried oregano, crumbled
⅓ cup Kalamata olives, pitted and chopped
⅓ cup drained capers
½ cup pine nuts, roasted
¼ cup green onions finely chopped

Dressing
2 tbsp. fresh lemon juice
1 tbsp. Dijon mustard
pinch of sea salt
2 tbsp. sherry vinegar or 1 tbsp. apple cider vinegar, 1 tbsp. umeboshi vinegar
1 tbsp. shallots minced
¼ olive oil
combine all and set aside

Bring water to a boil and add barley, salt and bay leaves. Simmer for 60 minutes, or until all water is absorbed. Cool. Add dressing and oregano. Chill about 2 hours or until ready to serve. Before serving add olives, capers, pine nuts and green onions.
