INGREDIENTS
• 3 cups cooked rice *
• 1 lb of chicken breast cut in small pieces
• 1/4 cup soy sauce
• 2 Tbs sesame oil
• 1 small white onion, chopped
• 2 cloves garlic , minced
• 1 cup fresh peas and carrots
• 8 sliced mushroom
• 2-3 Tablespoons soy sauce (more or less to taste)
• 2 eggs, lightly beaten

Directions:

1. Preheat a large skillet to medium heat.
2. Pour sesame oil in the bottom.
3. Add chicken with soy sauce and stir and fry until fully cooked.
4. Remove chicken from the pan
5. Add white onion, peas, carrots and mushrooms and fry until tender.
6. Pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
7. Add the rice and chicken to the veggie and egg mixture. Pour the soy sauce on top. Stir the mixture until heated through and combined.
