1/2 c. granulated sugar
1 c. softened butter
2 separated eggs
1 tsp. baking powder
1/2 tsp. salt
2 c. all-purpose flour (can use part rolled oats, if desired)

Make crust by combining sugar, butter, egg yolks, baking powder, salt and flour. Blend until mixture is crumbly. Press 1/2 of mixture into bottom of 9x13 baking pan; reserve remaining half. Set aside.
 

FILLING

4 medium apples (4 cups grated)
1 8 oz. pkg. finely grated cheddar cheese
1/4 c. flour
3/4 c. granulated sugar
1 tsp. cinnamon

Directions:
Grate apples and cheese together in one bowl (food processor works well for this). Add sugar, flour and cinnamon. Mix well. Spread apples/cheese filling over crust. Sprinkle remaining half of crumb mixture over filling.
 

TOPPING

Reserved egg whites
1/4 c. cream cheese
1 1/2 c. confectioner's sugar

Make topping by whipping egg whites until peaks form. Gradually add confectioner's sugar and cream cheese, beating continuously. Spoon evenly over all layers. Bake at 350º for 30-35 minutes or until light golden brown.
