3 T. corn starch
6 C. whole milk
2 ⅔ C. sugar
4 eggs
1 - 13 oz can evaporated milk
1 pint whipping cream
3 ½ T. vanilla
¾ tsp salt

Crushed ice (about 25 lbs) & rock salt

Directions:
Directions:
Mix cornstarch with ½ cup milk and whisk together, add additional 1 ½ cups milk and cook in a double boiler until thick and smooth, beating constantly to avoid lumps. (This can be done on a pan on the stove but must stir constantly and watch carefully to keep from burning or getting lumps). Cool slightly by first removing from heat and stirring & then placing pot in ice water.

Blend sugar, eggs, salt & evaporated milk with an electric mixer. Add warm cornstarch mixture slowly and then beat well. Add whipping cream, remaining milk & vanilla. Pour into gallon ice cream freezer. Use ice and rock salt to help freeze.
