Oatmeal Cake

1 cup quick oatmeal
1½ cups boiling water
1 cup brown sugar
1 cup white sugar
½ cup shortening
2 eggs, beaten
1½ cups flour
1 tsp. baking soda
½ tsp. salt
1 tsp. cinnamon

Directions:
Directions:
Pour boiling water over oatmeal and let stand 10 minutes. Cream sugar and shortening, add eggs and dry ingredients alternately with oatmeal. Pour into a 9x13-inch pan.

Bake at 350º for 30-40 minutes. Cover with broiled coconut frosting. (See recipe below.)
 

Broiled Coconut Frosting


Ingredients:

¼ cup margarine
½ cup brown sugar
3 Tbsp. cream
⅓ cup chopped nuts
¾ cup coconut

Directions:
Directions:
Mix all the above ingredients together. Spread on the oatmeal cake. Broil under the oven broiler until bubbly. Watch carefully as this can burn quickly.
