1 can cream of chicken soup
½ cup sour cream
1 Tbsp. butter
1 tsp. chili powder
1 med. onion (½ cup), chopped
1 (4 oz.) can chopped green chili
2 cups chopped, cooked chicken or turkey
8 flour tortillas (8-inch)
1 cup shredded Cheddar or Monterey Jack cheese

Directions:
Directions:
Stir soup and sour cream together; set aside. Heat butter in saucepan over medium heat; add onion and chili powder; cook until onion is tender. Add chicken, chilies and 2 tablespoons soup mixture.

Spread ½ cup soup mixture in a shallow 11x8-inch baking dish. Spoon about ¼ cup chicken mixture down the center of each tortilla. Roll up tortillas and place seam side down in baking dish. Spoon soup mixture over filled tortillas. Top with cheese.

Bake at 350º for 25 minutes, or until enchiladas are hot and bubbly.
