Crawfish Pie Recipe

stick butter
bunch chopped green onions (about 1 cup)
1 lb crawfish tails with fat
cup flour
cup milk
1 egg, beaten
cup grated cheddar cheese
grated Monterrey jack cheese with jalapenos
tsp red pepper
1 9-inch deep dish pie shell or 12 3-inch pie shells. (Thaw 10 to 15 minutes and pre-bake at 350 for 5 minutes.)

Melt butter, saute' green onion and crawfish tails.
Whisk together, in a separate bowl, milk, flour, egg and red pepper.
Remove crawfish mixture from heat and add milk mixture.
Stir in cheeses.
Pour into pre-baked pie crust(s) and bake at 350 for 30 minutes.
