Cinnamon or Pecan Rolls Recipe

9-10 cups flour
2 pkgs. yeast
1 tsp. salt
cup sugar
3 cups water
3 Tbsp. cooking oil
2 eggs
Cinnamon to taste
Sugar to taste
Butter, softened
Pecans (optional)
Caramels (optional)
Frosting (optional)

Combine 3 cups flour with yeast, salt and sugar in a mixer bowl. Add water and cooking oil; beat 3-5 minutes. Add eggs; beat 1-2 minutes. Add 3 more cups flour; beat 1-2 minutes. Stir in 3 to 4 more cups of flour by hand; knead to right consistency. Let dough raise in a warm place until double in size about 1 hr. Knead down; let raise again until double in size, about 1 hr.

Roll out the dough into a rectangle, spread with butter, sugar and cinnamon. Roll up and cut into rolls. Refrigerate overnight. Bake plain and frost OR place caramels and pecans in bottom of pan.

Bake 325 to 350 for 25-30 minutes until golden brown.
