2 1/2 c. gluten-free flour (from a heath food store if you are having trouble finding it in your local super market)

1 egg

3 tbsp. olive oil

1/2 c. skimmed milk

1 tsp. finely chopped mint

1 tsp. finely chopped parsley

Directions:
Directions:
Mix the flour, egg, olive oil, and milk to make a dough, not too firm, adding a little water or flour if necessary.

Finally, mix in the chopped herbs.

Preheat the oven to 345 F.

Cover a baking sheet with baking non bleached parchment paper.

Put portions of the dough into an icing bag with a star tip or another fun tip (or in a pinch a plastic zip lock freezer bag cutting the bottom corner off small enough to dispense) and squeeze out different shapes onto the baking sheet.

Bake in the hot oven for 15-20 mins.

Turn off the heat and allow the cookies to dry for another hour in the oven.
