1 lb. preferred choice of (turkey, extra lean ground beef, chicken, veggie ground round, or pork/lamb/bison) whichever you prefer, though I enjoy the turkey the most!
2 eggs
¼ cup uncooked quinoa
1 medium onion
3 garlic cloves
2 chilies or chili powder
1 tsp. coconut oil or olive oil
1 tsp. thyme, fresh if possible
1 tsp. rosemary, fresh if possible
¼ tsp. black pepper
1 tsp. salt

Cook quinoa as directed.

Preheat oven to 350 F.

Chop the onion finely in your food processor or the good ol' fashion way by hand!

Now add the cooked quinoa and all other ingredients to a large bowl and mix together.

Grease a loaf tray with coconut or olive oil, then add the mixture and bake for 1 hour.

Varieties can include:
*Double the recipe and have left overs.
*Adding a mushroom soup sauce as a topper after plating.
*If using turkey meat add dried cranberries into the mixture before baking, or whole cranberry sauce on the side after plating.
*Have fun and mix it up from time to time, a classic dish with a twist!

This is a recipe I stumbled across and found it to be a staple of mine especially during winter. I like to have a lot of fun with it and play around with the recipe. The kitchen is your playground, get dirty!
