Wash smooth, firm ripe tomatoes. Loosen skins by dipping tomatoes 1 minute in boiling water, then into ice cold water. Peel, remove stem ends and cut tomatoes into pieces. Pack into clean Mason jars, leaving ½ inch head space. Press tomatoes gently to release juice so it fills spaces. Add ½ tsp salt to pints, 1 tsp. salt to quarts. Adjust lids.

Process at 5 pounds pressure - Pints and Quarts 8 minutes.
Process at 15 pounds pressure - Pints and Quarts 0 minutes.
