Wash smooth, firm ripe tomatoes. Loosen skins by dipping tomatoes 1 minute in boiling water, then into ice cold water. Peel, remove stem ends and cut tomatoes into pieces. Pack into clean Mason jars, leaving inch head space. Press tomatoes gently to release juice so it fills spaces. Add tsp salt to pints, 1 tsp. salt to quarts. Adjust lids.

Process at 5 pounds pressure - Pints and Quarts 8 minutes.
Process at 15 pounds pressure - Pints and Quarts 0 minutes.
