Wash ripe, juicy tomatoes. Remove stem ends and cut into pieces. Simmer tomatoes until softened, stirring often. Run through sieve or strainer. Stir in 1 tsp salt to each quart of tomato juice and bring to a boil.

Pour hot tomato juice in clean, hot Mason Jars, leaving ½ inch head space. Adjust jar lids.

Process at 5 pounds pressure - Pints and Quarts 5 minutes.
Process at 15 pounds pressure - Pints and Quarts 0 minutes.

Hot pack by putting boiling tomato juice into Mason jars. Place flats in water and bring up to boil. Place on Jars and tighten rings. Be sure to refrigerate any jars that do not seal.
