2 gallon large green cucumbers
2 C. pickling salt
8 ½ qt water
7 C. vinegar
1 T. powdered alum
1 tsp. green food color
12 C. sugar
4 sticks cinnamon

Directions:
Directions:
Cut cucumbers in ½ inch slices. add salt and quarts water; let stand 5 days. Drain.

Combine 1 cup vinegar, alum, and food coloring in kettle. Add cucumbers and water to cover. Simmer 2 hours. Drain.

Make syrup by bringing to boil: 6 cups vinegar, 2 cups water, sugar and cinnamon. Pour over rings and let stand overnight.

Drain syrup and reheat, pour back over rings. Repeat for 3 days.

On third day pack rings in hot sterilized jars, pour in boiling syrup. Seal. Makes 9 pints.
