4 qts tomatoes, peeled and chopped
3 C. onions, finely sliced
1 C. green bell peppers, chopped
1 C. red bell peppers, chopped
2 C sugar
2 T. salt
¼ tsp. cayenne pepper
1 T. cloves
3 cinnamon sticks
1 T. mustard seed
3 C. vinegar

Directions:
Directions:
Combine vegetables, sugar, salt, and cayenne pepper in a large heavy pot. Place over low heat; cook for 2 hours stirring occasionally.

Tie spices in cheesecloth. Add spice bag and vinegar to vegetables. Cook and stir until thick, stirring occasionally.

Pour into jars; process in water bath 25 - 30 minutes.

Use this sauce in place of ketchup in recipes or as a table sauce.
