1# large lima beans
1/2 c. butter
1 c. brown sugar
1/4 c. molasses
1 c. sour cream
1/2 c. chopped onion
1 T. dry mustard
1/2 t. salt
1/4 t. pepper
4 slices bacon

Directions:
Directions:
Soak lima beans overnight in 2 quarts cold water. Next day, add a pinch of baking soda. Bring to a boil. Skim foam, lower heat and cook for 30-45 minutes. Drain; place in flat glass dish. Melt butter. Add brown sugar and molasses. Cook for 2 minutes and then remove from heat. Cool slightly and then stir in sour cream, onion, mustard, salt & pepper. Pour mixture over beans and mix lightly. Cut bacon into 1" pieces and arrange over top of beans. Cover and bake 1¼ - 1½ hours @ 250º, removing cover after 30 minutes.
