30 C. tomatoes
7 C. onions
2 C. green peppers
2 - 3 tsp. Cayenne pepper
42 cloves garlic
12 T. sugar
12 tsp salt

Directions:
Directions:
If using fresh tomatoes, blanch and skin, then chop in a food processor to desired chunkiness. If using canned or frozen tomatoes, thaw and drain well, then chop in food processor. Chop the rest of the vegetables and put into heavy, large pot and cook over medium heat for 1 to 2 hours. Be sure to stir frequently to keep mixture from sticking to the pot. Skim off foam during cooking. Cook to desired thickness then ladle into jars. Process in boiling water bath for 30 minutes.
