14 lbs. apples (after cored)
6 lbs. sugar
2 sticks cinnamon or 1 tsp. ground cinnamon

Core and quarter 14 lbs. of apples. Remove any bruised spots, but do not peel. Place apples in large crock and sprinkle with 6 lbs. of sugar. Stir gently: don not add water. Cover with tea towel and let set overnight.

Place mixture in a 7 qt. Pressure cooker. Add cinnamon. Pressure cook at 10 lbs. for 1 hr. and 20 min. Remove from heat; allow pressure to return to 0 degrees. Remove lid and put apples through a sieve.

Reheat apple butter to boiling point. Pack into canning jars to about ½ inch from top. Seal according to jar lid directions.

Process in water bath - - pints 15 min., Quarts 20 min. Makes approx 7 qts.
