Ingredients:  
1 c. dried split peas, sorted and washed
4 c. water
1/3 c. diced carrots
1/2 c. diced celery
1/2 medium onion, diced
1 t. salt
1/4 t. thyme
1/2 lb. smoked sausage, cut in chunks

Directions:
Directions:
Bring to a boil, all ingredients except sausage. Simmer for 1 hour. Add sausage and cook an additional 45 minutes.

I remove casing from sausage (easier to chew).
