Ingredients: 6 Egg whites 34 t Cream of Tartar 3/4 t Vanilla Dash salt 3/4 C Sugar 6 Sponge Cake Dessert cups 2 C Peppermint Ice Cream 3 T Crushed peppermint-stick candy 1/4 C Brandy (Peppermint Schnapps would be good)

Directions:1. Beat egg whites with cream of tartar, vanilla and salt to soft peaks. 2. Gradually add sugar, beating to stiff peaks. 3. Place cups on cutting board; top each with ice cream. 4. Cover with meringue, spreading thicker over ice cream and thinner around cake; make sure you seal the meringue, at the bottom. 5. Sprinkle the meringue with crushed peppermint. Place in freezer until serving time. 6. Broil for 1 or 2 minutes - watching all the time - until meringue turns brown 7. Heat brandy until hot. Ignite brandy and serve over the Baked Alaska. If you use a chafing dish at the table you will be able to keep the flame going while you serve it. |
